Our "Dorè" is a sparkling white wine produced with the Charmat or Martinotti Method. This method was invented and patented in 1895 by Federico Martinotti from Piedmont, then adopted by the French Eugène Charmat who built the equipment needed to produce the sparkling wine. The Charmat method involves a second fermentation of wine obtained from aromatic grape varieties such as Chardonnay and Garganega, whose grapes are harvested in September, in pressurized steel barrels, known as autoclaves. This is how our sparkling white wine "Dorè" is born, light straw yellow with greenish reflections, fresh with a delicate sparkling sensation and fruity with a hint of exotic fruit. Therefore we can consider sparkling wines half way between a still wine and a sparkling wine such as our Spumante Cuvée Brut, due to the content of carbon dioxide which will not be lower than 1 bar nor higher than 2,5 bar. We suggest to match our "Dorè" with fish dishes or even pizza. Excellent as aperitif.
