Vinification: Maceration on the skins at a low temperature for 12/24 hours. Fermentation at a controlled temperature of 16°C-18°C. Ageing in steel barrels for 4-6 months

The town of Custoza, in Verona, just 10 minutes by car from Corte Fornello, has been a place of great importance in history. In Roman times it was already famous as a guard post on the Via Postumia, a consular road that connected the two main Roman ports in northern Italy. Later, it was the protagonist of numerous battles between the Italian and Austrian armies, and to commemorate all the fallen a gigantic ossuary was built and can be visited. In this small town full of history was born on February 8, 1971 the Denomination of Controlled Origin (DOC) of Custoza wine, one of the first in Italy. The production area, which goes hand in hand in certain points with the area of Bardolino DOC and Chiaretto di Bardolino DOC, includes 9 municipalities between the Morainic hills and the eastern shore of Lake Garda. Therefore we find a suitable climate and soil for the cultivation of its grapes: Garganega, Fernanda, Chardonnay, Trebbiano and Trebbianello. The harvesting of Custoza DOC grapes begins at the end of August and ends at the beginning of October. Then a maceration on skins at low temperature is carried out for about 24 hours. At a controlled temperature between 16°C. and 18°C., the must is fermented and once it has become wine, it is aged in steel barrels for about 6 months. We obtain in this way, a Custoza DOC of a beautiful pale straw yellow color with floral scents and hints of citrus. A very fresh, smooth and delicate white wine with good body. We suggest to match it with first courses, white meat and fish.
